Count quantities on your products so sales lower them and sold-out products stop selling.
Stock tracking is a feature the owner switches on under Shop › Features. While it is off, products have no quantity, and the panel hides the stock fields, the stock columns of imports and the stock pages.
The same switch is called Enable Stock under Shop › Settings, in the general settings.
Open a product. The Inventory card is now shown. Switch on Track stock quantity, enter the Quantity in stock and, if you want a warning, a Low stock alert at figure. See Inventory fields on a product.

Tracking is per product. A product with Track stock quantity off is not counted; you set it in or out of stock by hand with Stock status.
Every change is written to the stock history with a reason: orders, cancellations, changes to an order, returns, transfers, imports, edits in the panel, stocktakes and integrations.
When you turn stock tracking off, quantities are no longer counted. What you already recorded is kept. Pages that depend on it show Stock tracking is off, with a Turn it on in Settings button for the owner. The button opens the Features page. History, transfers and counts made before stay listed, read-only, and actions that would move stock are refused. Stocktakes leaves the menu when no count was ever made, and Locations & stock when you also have one location and a plan for one. A CSV file that still has stock columns imports without them.
