Before you start
Restore needs the Customize permission. Publishing a version again needs the Publish permission. Turn on Online store in Shop › Features. If you do not see it there, ask support.

Every publish is a numbered version. The clock button in the editor's top bar, Version history, lists the newest 50.
"Restore copies a version into the draft (you can undo it). Publish this version makes it live again and keeps your draft."

Restore: bring a version into the draft
Use this to keep working from an earlier design.
Select Restore on the version.
Read "Your saved draft will be replaced by this version. Undo (⌘Z / Ctrl+Z) brings it back."
Select Replace draft.
The panel closes and the draft now holds that version. Unsaved edits are saved first. Customers see no change until you publish.
If the theme has changed since that version, a notice starting "Version N restored." tells you what was adjusted:
"The theme's required section was put back (…)." A page's main section was missing.
"N settings no longer match the theme — fix them before saving or publishing."
Publish a version again: roll back at once
Use this when the live site has a problem and an earlier version was fine.
Select Publish on the version. Its tooltip reads "Make this version live again; your draft is kept".
Read "Version N goes live right away. Your draft stays as it is."
Select Make live.
The editor confirms "Version N is live again as version M." The old version is published again as a new version, so the history stays complete.
Your draft may still hold the design you rolled back from. The editor then asks: "Your draft still holds the version you rolled back from — publishing it would bring that back. Use version N as your draft instead?"

The rollback was refused. Restore, fix the settings, then publish
