The ways customers can pay, where each one is set up, and what happens after a payment.
Your checkout offers the payment methods chosen for your shop. Every new shop starts with Cash On Delivery and Card On Delivery. Online methods are added by connecting a payment gateway with your own account at that provider.
Payment methods live on the Payment Gateways tab of Shop › Settings. Not every shop sees that tab. See Who manages your payments first.
Store setup also has a payments step. See Step 4: Getting paid.
